These babies are seriously good. The ideal beach, school, hike, stuck in traffic, pre-workout/post workout, Netflix and chill snacks. The raddest thing about these health nut cookies is that they can be enjoyed two ways - raw or cooked!
Lets get to the good stuff…
(MAKES APPROX. ONE DOZEN COOKIES)
3 CUPS OATS (GLUTEN FREE OR REGULAR)
3 RIPE BANANAS (SPOTTY OR BROWN IS BEST)
1 TSP. MACA POWDER
1 TSP. CINNAMON
1 TBSP. MAPLE SYRUP
2 TBSP. CACAO NIBS
6 PITTED MEDJOOL DATES
1 TBSP. RAW SUNFLOWER SEEDS
1 TSP. VANILLA BEAN EXTRACT (OPTIONAL)
PREPARATION: COOKED COOKIES
Lets get baked. Pre-Heat your oven to 300 degrees Fahrenheit. Now remove all pits from medjool dates and chop dates into small pieces. Once you have decided wether or not to blend/pulse your oats, you'll want to grab a large bowl and mix all ingredients together until combined evenly (I find that using a fork to mash the bananas works best.) Stir Oats, Bananas, Cinnamon, Maple Syrup, Sunflower Seeds, Cacao Nibs, Maca Powder, Medjool Dates and Vanilla Bean Extract together.
Here is where you can get creative.
Other possible ingredients include but are definitely not limited to:
Vegan Dark Chocolate Chips
Chopped Walnuts, Almonds, Brazil Nuts or Pecans
Using a spoon, scoop cookie batter onto parchment paper lined baking tray (You may also use a non-stick tray if you choose.) Flatten cookie mounds with a rubber spatula gently. Cook for approx. 9 minutes or until cookies are of desired crispness (Keep an eye on them! These babies can burn quickly - Trust me!) Golden on the outside is best. Allow to cool on parchment paper for 10 minutes. You can then continue on to eat the entire batch in one sitting, keep them in the refrigerator for the next five days, or freeze them and re-heat them at anytime.
PREPARATION: RAW COOKIES
Keep it raw. In a hurry or craving something more chewy and light? Combine all ingredients (using raw, unprocessed oats,) and place on parchment lined tray. Here you can either dehydrate in the dehydrator for 4 hours on 110 degrees Fahrenheit, or place in the freezer for 2-4 hours to mold. Once cookies have set in the freezer, remove and allow to thaw or keep them in an air tight container in the fridge for up to one week.
